A "weasel" one of a number of tools you can use to wind thread or yarn into bobbins or spools. They were used by anybody who had to use a great deal of thread--tailors, shoemakers, whoever. The weasel really does make a popping sound when the thread is all wound. I think this is where all the stitching, sewing allusions come from in the rhyme. You can still find these wooden gadgets in use today among handweavers and spinners, knitters, etc. Followups:
